Barley salad with broccoli, feta, and tomatoes

Boil barley. Steam broccoli. Combine with raw vegetables, feta, oil, and parsley.

Ingredients

  • barley 40g
  • broccoli 150g
  • cherry tomatoes 100g
  • carrots 1 medium
  • feta cheese 20g
  • olive oil 12mL
  • parsley

Instructions

  1. Boil the barley in salted water.
  2. In a separate pan, steam the broccoli.
  3. When both are cooked, drain well and set aside to cool.
  4. Mix the barley and broccoli in a bowl and add the raw chopped cherry tomatoes, carrots, and onion.
  5. Stir in the feta cheese.
  6. Season with the oil, parsley, and salt and pepper to taste.
  7. Serve warm or cold.
