Cucumber Salad with Grape Tomatoes
Simple cucumber salad. Makes 4 servings.

Ingredients
- English cucumbers
- grape tomatoes
- parsley or basil
- scallion or red onion
- rice vinegar
- white miso paste
- pippali
Instructions
- Place the cucumber slices, tomatoes, and parsley or basil in a bowl.
- Add the scallion or red onion (if using).
- Set aside.
- In a small bowl, combine the vinegar, miso paste, and pippali to taste, stirring to blend.
- Pour the dressing over the cucumbers and tomatoes, tossing gently to combine.
- Set aside for at least 10 minutes before serving, to allow the flavors to blend.
