Cucumber Salad with Grape Tomatoes

Simple cucumber salad. Makes 4 servings.

Ingredients

  • English cucumbers
  • grape tomatoes
  • parsley or basil
  • scallion or red onion
  • rice vinegar
  • white miso paste
  • pippali

Instructions

  1. Place the cucumber slices, tomatoes, and parsley or basil in a bowl.
  2. Add the scallion or red onion (if using).
  3. Set aside.
  4. In a small bowl, combine the vinegar, miso paste, and pippali to taste, stirring to blend.
  5. Pour the dressing over the cucumbers and tomatoes, tossing gently to combine.
  6. Set aside for at least 10 minutes before serving, to allow the flavors to blend.
