Ingredients
- yellow potatoes
- scallions
- parsley
- dill
- chives
- nutritional yeast
- lemon juice or apple cider vinegar
- white miso paste
- onion powder
- pippali
Instructions
- Steam potatoes 25–30 min until tender but firm; cool in cold water and dice into ½–¾-inch pieces.
- Reserve ¼ cup diced potato; toss the rest with scallions, parsley, dill, and chives.
- Blend reserved potatoes with nutritional yeast, lemon juice, 1 tbsp water, miso, onion powder, and pippali until smooth (thin with more water if needed).
- Toss dressing with salad; refrigerate until serving.
