French-Style Potato Salad
French-style potato salad with fresh herbs. Makes 6 servings.

Ingredients
- yellow potatoes
- scallions
- parsley
- dill
- chives
- nutritional yeast
- lemon juice or apple cider vinegar
- white miso paste
- onion powder
- pippali
Instructions
- Steam the potatoes in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot until tender but still firm, 25 to 30 minutes.
- Drain and cover with cold water to cool.
- When the potatoes are cool enough to handle, cut them into ½- to ¾-inch (1- to 2-cm) dice.
- Reserve ¼ cup (40g) of the potatoes, then transfer the rest to a large bowl and add the scallions, parsley, dill, and chives.
- Set aside.
- In a small blender or food processor, combine the reserved ¼ cup (40g) of potatoes and the nutritional yeast, lemon juice, 1 tablespoon of water, miso paste, onion powder, pippali, and sodium-free salt substitute (if using).
- Blend until smooth.
- Add a little more water if the dressing is too thick.
- Pour the dressing onto the potato mixture and toss gently to combine.
- Taste to adjust the seasonings, if needed.
- Cover and refrigerate until ready to serve.
