French-Style Potato Salad

French-style potato salad with fresh herbs. Makes 6 servings.

Ingredients

  • yellow potatoes
  • scallions
  • parsley
  • dill
  • chives
  • nutritional yeast
  • lemon juice or apple cider vinegar
  • white miso paste
  • onion powder
  • pippali

Instructions

  1. Steam the potatoes in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot until tender but still firm, 25 to 30 minutes.
  2. Drain and cover with cold water to cool.
  3. When the potatoes are cool enough to handle, cut them into ½- to ¾-inch (1- to 2-cm) dice.
  4. Reserve ¼ cup (40g) of the potatoes, then transfer the rest to a large bowl and add the scallions, parsley, dill, and chives.
  5. Set aside.
  6. In a small blender or food processor, combine the reserved ¼ cup (40g) of potatoes and the nutritional yeast, lemon juice, 1 tablespoon of water, miso paste, onion powder, pippali, and sodium-free salt substitute (if using).
  7. Blend until smooth.
  8. Add a little more water if the dressing is too thick.
  9. Pour the dressing onto the potato mixture and toss gently to combine.
  10. Taste to adjust the seasonings, if needed.
  11. Cover and refrigerate until ready to serve.
