Ingredients

  • yellow potatoes
  • scallions
  • parsley
  • dill
  • chives
  • nutritional yeast
  • lemon juice or apple cider vinegar
  • white miso paste
  • onion powder
  • pippali

Instructions

  1. Steam potatoes 25–30 min until tender but firm; cool in cold water and dice into ½–¾-inch pieces.
  2. Reserve ¼ cup diced potato; toss the rest with scallions, parsley, dill, and chives.
  3. Blend reserved potatoes with nutritional yeast, lemon juice, 1 tbsp water, miso, onion powder, and pippali until smooth (thin with more water if needed).
  4. Toss dressing with salad; refrigerate until serving.
