Garbanzo bean minestrone with pasta

Boil vegetables and soaked garbanzo beans. Add pasta when tender. Drain, add oil and Parmesan.

Ingredients

  • mixed vegetables 250g
  • garbanzo beans 150g
  • pasta 40g
  • olive oil 25mL
  • parmesan 5g

Instructions

  1. Bring a large pot of water to a boil.
  2. Add salt, the mixed vegetables, and soaked garbanzo beans.
  3. When the vegetables are tender, add the pasta.
  4. When pasta is cooked, drain and add the olive oil.
  5. Serve the soup sprinkled with Parmesan cheese.
