From The How Not to Age Cookbook

Ingredients

  • portobello mushroom caps
  • red onion slices
  • Umami Sauce 2.0
  • whole-grain burger buns
  • lettuce
  • tomato
  • jalapeno
  • Cheesy Sauce

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. On a parchment paper–lined baking sheet, arrange the mushroom caps and red onion slices in a single layer.
  3. Drizzle with Umami Sauce 2.0 and bake until browned on both sides, turning once, about 12 minutes per side.
  4. Transfer the mushrooms and onion to a plate, and place the burger buns under the broiler, cut side up, until lightly toasted, about 5 minutes.
  5. Watch carefully so they don’t burn.
  6. To serve, arrange a lettuce leaf and a tomato slice on the bottom half of each bun, then top each with a mushroom cap, two onion slices, and some jalapeño slices (if using).
  7. Drizzle with the Cheesy Sauce (if using) and cover with the top half of the bun.
  8. Serve hot.
