Ligurian minestrone (minestrone alla Genovese)

Boil beans, add chopped vegetables. Cook 45 min, add pasta. Finish with olive oil and pesto.

Ingredients

  • cannellini beans 150g
  • potato 1 medium
  • eggplant 1 medium
  • zucchini 1 medium
  • cabbage 1 medium
  • peas
  • green beans 150g
  • garlic
  • pasta 40g
  • olive oil 25mL
  • pesto 1 tsp

Instructions

  1. Boil the soaked beans in a pot of water.
  2. Chop all the vegetables in small pieces and add them to the pot, along with the garlic and salt and pepper.
  3. Cook the soup for about 45 minutes, then add the pasta.
  4. When the pasta is cooked, stir in the olive oil and pesto and remove the pot from the heat.
