Ligurian minestrone (minestrone alla Genovese)
Boil beans, add chopped vegetables. Cook 45 min, add pasta. Finish with olive oil and pesto.

Ingredients
- cannellini beans 150g
- potato 1 medium
- eggplant 1 medium
- zucchini 1 medium
- cabbage 1 medium
- peas
- green beans 150g
- garlic
- pasta 40g
- olive oil 25mL
- pesto 1 tsp
Instructions
- Boil the soaked beans in a pot of water.
- Chop all the vegetables in small pieces and add them to the pot, along with the garlic and salt and pepper.
- Cook the soup for about 45 minutes, then add the pasta.
- When the pasta is cooked, stir in the olive oil and pesto and remove the pot from the heat.
