Ingredients
- cannellini beans 150g
- potato 1 medium
- eggplant 1 medium
- zucchini 1 medium
- cabbage 1 medium
- peas
- green beans 150g
- garlic
- pasta 40g
- olive oil 25mL
- pesto 1 tsp
Instructions
- Boil pre-soaked beans in a pot of water.
- Chop all vegetables small; add to the pot with garlic, salt, and pepper.
- Simmer ~45 min, then add pasta.
- When pasta is done, remove from heat and stir in olive oil and pesto.
