Ingredients

  • cannellini beans 150g
  • potato 1 medium
  • eggplant 1 medium
  • zucchini 1 medium
  • cabbage 1 medium
  • peas
  • green beans 150g
  • garlic
  • pasta 40g
  • olive oil 25mL
  • pesto 1 tsp

Instructions

  1. Boil pre-soaked beans in a pot of water.
  2. Chop all vegetables small; add to the pot with garlic, salt, and pepper.
  3. Simmer ~45 min, then add pasta.
  4. When pasta is done, remove from heat and stir in olive oil and pesto.
