Mediterranean spelt salad with artichokes and mushrooms

Boil spelt, combine with artichokes, vegetables, olives. Separately cook mushrooms with garlic and parsley.

Ingredients

  • spelt 40g
  • artichokes in oil 80g
  • carrot 1 medium
  • cherry tomatoes 150g
  • olives 20g
  • olive oil 12g
  • mushrooms 150g
  • garlic
  • parsley

Instructions

  1. Boil the spelt in salted water until cooked.
  2. Drain and place it in a bowl.
  3. Add the artichokes, carrot, tomatoes, and olives.
  4. Season with oil, salt and pepper, and additional herbs, if desired.
  5. In a separate pan, boil the mushrooms with garlic and water.
  6. When the mushrooms are tender, add the parsley and salt to taste.
  7. Stir in the oil.
  8. Enjoy the mushrooms separately or add them to the rest of the ingredients.
