Mushroom Gravy
Savory mushroom gravy. Makes about 3 cups.

Ingredients
- Vegetable Broth 2.0
- yellow onion
- cremini mushrooms
- garlic
- oat flour
- unsweetened soy milk
- Umami Sauce 2.0
- thyme
- pippali
Instructions
- Heat a large skillet over medium heat.
- Add ¼ cup (60ml) of the Vegetable Broth 2.0 and the onion, and cook, stirring occasionally, until softened, about 5 minutes.
- Add the mushrooms and garlic. Continue to cook, stirring occasionally, until the liquid has almost evaporated, about 5 minutes.
- Sprinkle in the oat flour and continue stirring until it has been absorbed.
- Add the remaining 1¼ cups (290ml) of Vegetable Broth 2.0, stirring until incorporated, and continue to cook until the liquid has thickened.
- Stir in the soy milk, Umami Sauce 2.0, thyme, and pippali.
- Continue to simmer over medium-low heat until thickened, stirring frequently.
- Serve hot.
- If not serving right away, set aside to cool, then cover and refrigerate until needed.
