Mushroom Gravy

Savory mushroom gravy. Makes about 3 cups.

Ingredients

  • Vegetable Broth 2.0
  • yellow onion
  • cremini mushrooms
  • garlic
  • oat flour
  • unsweetened soy milk
  • Umami Sauce 2.0
  • thyme
  • pippali

Instructions

  1. Heat a large skillet over medium heat.
  2. Add ¼ cup (60ml) of the Vegetable Broth 2.0 and the onion, and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add the mushrooms and garlic. Continue to cook, stirring occasionally, until the liquid has almost evaporated, about 5 minutes.
  4. Sprinkle in the oat flour and continue stirring until it has been absorbed.
  5. Add the remaining 1¼ cups (290ml) of Vegetable Broth 2.0, stirring until incorporated, and continue to cook until the liquid has thickened.
  6. Stir in the soy milk, Umami Sauce 2.0, thyme, and pippali.
  7. Continue to simmer over medium-low heat until thickened, stirring frequently.
  8. Serve hot.
  9. If not serving right away, set aside to cool, then cover and refrigerate until needed.
