Octopus with potato (polpo e patate schiacciate)

Boil octopus and potato separately. Mash potato, cut octopus. Combine with tomatoes, olives, oil, and lemon.

Ingredients

  • octopus 60g
  • potato 1 medium
  • cherry tomatoes 150g
  • olives 20g
  • olive oil 25mL
  • parsley
  • lemon

Instructions

  1. Boil the octopus and potato in separate saucepans.
  2. Drain both.
  3. Cut the octopus and mash the boiled potato in a bowl.
  4. Add the cherry tomatoes, olives, and oil.
  5. Season with lemon, parsley, and salt.
