The traditional Calabrian pasta e vaianeia from the village of Molochio, where a small amount of pasta is stretched with large amounts of green beans, navy beans, carrots, potato, zucchini, and tomato — a dish Longo credits from the blue zone community where he grew up.

Ingredients
- navy beans 150g
- green beans 150g
- carrots 2 medium
- potato 1 medium
- zucchini 150g
- tomato 1 large
- garlic
- basil
- pasta 40g
- olive oil 25mL
- parmesan 5g
Instructions
- Boil pre-soaked navy beans in salted water until tender.
- Add green beans and carrots; cook 30 min. Add potato; cook 15 min. Add zucchini; cook 5 min.
- Add a whole tomato, cook until soft, then crush and remove skin.
- Stir in garlic, basil, and pasta; cook until pasta is done.
- Finish with olive oil, salt, and pepper.
