Pasta e vaianeia (Molochio recipe)

Traditional Molochio recipe. Boil beans, then add vegetables in stages. Add pasta last, finish with oil.

Ingredients

  • navy beans 150g
  • green beans 150g
  • carrots 2 medium
  • potato 1 medium
  • zucchini 150g
  • tomato 1 large
  • garlic
  • basil
  • pasta 40g
  • olive oil 25mL
  • parmesan 5g

Instructions

  1. Bring water to boil in a large pan.
  2. Add salt and the soaked navy beans.
  3. When the beans are tender, add the cut green beans and carrots.
  4. Boil the mixture for 30 minutes, then add the potato and boil for another 15 minutes.
  5. Add the zucchini and boil for 5 minutes.
  6. Add the whole tomato, boil it until tender, then smash it and remove its skin from the pot.
  7. Add the garlic, basil, and pasta.
  8. When pasta is cooked, add the olive oil, salt, and pepper.
  9. Stir until evenly mixed and heated through.
