Pinto Bean Spread

Versatile spread for burritos, wraps, or dip. Makes 6 servings.

Ingredients

  • pinto beans
  • garlic
  • apple cider vinegar
  • white miso paste
  • black cumin
  • pippali
  • plum tomatoes
  • red onion
  • jalapeno
  • smoked paprika
  • cilantro

Instructions

  1. In a bowl, combine the pinto beans, garlic, vinegar, miso paste, black cumin, and pippali, and mash until well mixed.
  2. Add the tomatoes, red onion, and jalapeño, and mix until well combined.
  3. Taste to adjust the seasonings.
  4. Transfer to a serving bowl and sprinkle with smoked paprika (if using) and cilantro.
  5. Serve right away, or cover and refrigerate for an hour to allow the flavors to intensify.
  6. If not serving immediately, keep the spread, covered, in the refrigerator.
  7. Properly stored, it will keep for up to 3 days.
