Purple Cabbage Slaw with Thai-Style Lime Dressing

Thai-inspired cabbage slaw. Makes 4-6 servings.

Ingredients

  • purple cabbage
  • carrot
  • scallions
  • cilantro
  • lime juice
  • Umami Sauce 2.0
  • garlic
  • date sugar or Date Syrup 2.0
  • white miso paste
  • Thai bird's eye chile

Instructions

  1. In a large bowl, combine the cabbage, carrot, scallions, and cilantro.
  2. Set aside.
  3. In a small bowl, blend the lime juice, Umami Sauce 2.0, 1 tablespoon of water, garlic, date sugar, miso paste, and Thai bird’s eye chile (if using).
  4. Pour the dressing onto the slaw, stirring to coat.
  5. Taste to adjust the seasonings if needed.
  6. Set aside for 15 to 20 minutes before serving to allow the flavors to blend.
  7. If not serving right away, cover and refrigerate until ready to enjoy.
