Purple Sweet Potato Bites
Tasty bite-sized snack. Makes 6 servings.

Ingredients
- purple sweet potatoes
- oat flour
- white miso paste
- coriander
- onion powder
- black cumin
- pippali
- unsweetened soy milk
Instructions
- Steam the purple sweet potatoes in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot until tender, about 20 minutes.
- Transfer the sweet potatoes to a bowl and set aside to cool for about 10 minutes.
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper and set aside.
- Mash the sweet potatoes with a fork or potato masher.
- Add the flour, miso paste, coriander, onion powder, black cumin, and pippali, and mix well.
- If the mixture is too dry to hold together, add a little soy milk, 1 teaspoon at a time.
- Use your hands to form the mixture into 1-inch (2.5-cm) balls and arrange them on the prepared baking sheet.
- Bake for about 8 minutes, or until a light golden brown.
- Remove from the oven, flip over each ball, then return the pan to the oven to bake for about 8 minutes longer.
- Remove from the oven and set aside to cool slightly before serving.
