Purple Sweet Potato Bites

Tasty bite-sized snack. Makes 6 servings.

Ingredients

  • purple sweet potatoes
  • oat flour
  • white miso paste
  • coriander
  • onion powder
  • black cumin
  • pippali
  • unsweetened soy milk

Instructions

  1. Steam the purple sweet potatoes in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot until tender, about 20 minutes.
  2. Transfer the sweet potatoes to a bowl and set aside to cool for about 10 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Line a baking sheet with parchment paper and set aside.
  5. Mash the sweet potatoes with a fork or potato masher.
  6. Add the flour, miso paste, coriander, onion powder, black cumin, and pippali, and mix well.
  7. If the mixture is too dry to hold together, add a little soy milk, 1 teaspoon at a time.
  8. Use your hands to form the mixture into 1-inch (2.5-cm) balls and arrange them on the prepared baking sheet.
  9. Bake for about 8 minutes, or until a light golden brown.
  10. Remove from the oven, flip over each ball, then return the pan to the oven to bake for about 8 minutes longer.
  11. Remove from the oven and set aside to cool slightly before serving.
