Rainbow Broccoli Slaw
Colorful slaw with variety of textures. Makes 6 servings.

Ingredients
- broccoli
- carrot
- purple cabbage
- scallion
- sunflower seeds
- dried barberries
- apple cider vinegar
- lemon juice
- red onion
- almond butter
- Savory Spice Blend 2.0
- nutritional yeast
- white miso paste
- date sugar
- parsley
- dill
Instructions
- Trim the ends of the broccoli stalks and cut off the florets.
- Reserve the broccoli florets for another use.
- Peel the broccoli stalks, then shred them in a food processor, using the large-hole shredding disk.
- Alternatively, halve the peeled stalks crosswise and thinly slice each half lengthwise to create rectangular slices.
- Cut the slices into matchsticks and transfer to a large bowl.
- Add the carrot, cabbage, scallion, and sunflower seeds.
- Drain the barberries and add to the salad bowl.
- Toss to combine.
- Set aside.
- In a small blender or food processor, combine all the dressing ingredients, except the parsley and dill, and blend until smooth.
- Transfer the dressing to a bowl, then stir in the parsley and dill.
- Taste to adjust the seasonings, if needed, adding a little water if the dressing is too thick.
- Add as much of the dressing as needed to the slaw, stirring well to coat.
- Set aside for 15 to 20 minutes before serving to allow the flavors to blend.
- If not serving right away, cover and refrigerate until ready to enjoy.
