Ingredients

  • rice 40g
  • zucchini 250g
  • peas 100g
  • onion 1 medium
  • olive oil 12mL
  • parsley
  • parmesan 1 tbsp

Instructions

  1. Boil rice in salted water; drain and set aside.
  2. Sauté zucchini, peas, and onion in a little water; drain.
  3. Combine with rice and olive oil, rest 2–3 minutes.
  4. Top with Parmesan or pesto and serve.
