Ingredients
- rice 40g
- zucchini 250g
- peas 100g
- onion 1 medium
- olive oil 12mL
- parsley
- parmesan 1 tbsp
Instructions
- Boil rice in salted water; drain and set aside.
- Sauté zucchini, peas, and onion in a little water; drain.
- Combine with rice and olive oil, rest 2–3 minutes.
- Top with Parmesan or pesto and serve.
