Rice with zucchini and peas

Boil rice. Separately cook zucchini, peas, onion. Combine with oil, Parmesan or pesto.

Ingredients

  • rice 40g
  • zucchini 250g
  • peas 100g
  • onion 1 medium
  • olive oil 12mL
  • parsley
  • parmesan 1 tbsp

Instructions

  1. Boil the rice in salted water.
  2. Drain and set it aside.
  3. In a separate pan, stir the zucchini, peas, and onion in water.
  4. Drain the vegetables, stir in parsley and salt and pepper to taste.
  5. Add the rice and olive oil and let it rest for 2 to 3 minutes.
  6. Add Parmesan or pesto, as preferred, and serve.
