Spinach-Mango Salad with Walnuts and Blueberry Vinaigrette

Salad with blueberry vinaigrette. Makes 4 servings.

Ingredients

  • blueberries
  • apple cider vinegar
  • red onion
  • pippali
  • baby spinach
  • mango
  • walnut pieces

Instructions

  1. In a small blender or food processor, combine ⅓ cup (45g) of the blueberries with the vinegar, minced red onion, and pippali, then blend until smooth.
  2. Set aside.
  3. In a large bowl, combine the spinach, mango, walnuts, red onion, and the remaining ⅔ cup (85g) of blueberries.
  4. Pour the dressing over the salad, toss to combine, and enjoy.
