Sweet Potato Rounds with Mango-Avocado Relish

Roasted sweet potato rounds with fresh relish. Makes 4 servings.

Ingredients

  • sweet potatoes
  • mango
  • cilantro
  • scallions
  • pippali
  • avocado
  • lime juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper and set aside.
  3. Cut the sweet potatoes into ¼-inch (0.5-cm)-thick rounds.
  4. Arrange the sweet potato rounds in a single layer on the prepared baking sheet and roast for 15 minutes.
  5. Turn over the rounds and roast until tender, about 5 minutes longer.
  6. Meanwhile, in a bowl, combine the mango, cilantro, scallions, and pippali.
  7. Pit and peel the avocado and cut it into a small dice.
  8. Add the avocado to the bowl.
  9. Add the lime juice and stir gently to combine.
  10. To serve, spoon some of the mango–avocado relish onto each of the roasted sweet potato rounds and arrange on a plate.
