Goji and Coconut Trail Mix

Homemade trail mix with cashews, almonds, Brazil nuts, pumpkin seeds, and goji berries. Full of anti-aging nutrients that reduce risk of heart disease and diabetes.

Ingredients

  • 1 cup raw cashews
  • 1 cup raw whole almonds
  • 1 cup raw Brazil nuts
  • 1 cup raw pumpkin seeds
  • 1 tsp ground cinnamon
  • 1 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 cup goji berries
  • 0.5 tsp flaky sea salt
  • 0.5 cup dark (70% cacao) chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the cashews, almonds, Brazil nuts, and pumpkin seeds. Sprinkle with the cinnamon, melted coconut oil, and maple syrup and mix well. Transfer to the baking sheet and roast for 10 minutes, until lightly golden. Let cool completely.
  3. Stir in the goji berries, sea salt, and chocolate, if using.
  4. Store in an airtight container in the fridge for up to 2 months.
