Ingredients

  • mango
  • rice vinegar
  • white miso paste
  • red pepper flakes
  • tempeh
  • mushrooms
  • ginger
  • red bell pepper
  • scallions
  • Umami Sauce 2.0
  • avocado
  • lemon juice
  • Boston or butter lettuce
  • carrot
  • cilantro

Instructions

  1. Blend all sauce ingredients until smooth; set aside.
  2. Steam tempeh 15 min; chop into bite-sized pieces.
  3. Sauté tempeh, mushrooms, ginger, bell pepper, and scallions in 2 tbsp water ~2 min; add Umami Sauce 2.0 and cook 1 min more.
  4. Dice avocado and toss with lemon juice.
  5. Fill lettuce cups with tempeh mixture, avocado, carrot, cilantro, and Mango Sauce.
