Lettuce Wraps with Mango Sauce

Ingredients

  • mango
  • rice vinegar
  • white miso paste
  • red pepper flakes
  • tempeh
  • mushrooms
  • ginger
  • red bell pepper
  • scallions
  • Umami Sauce 2.0
  • avocado
  • lemon juice
  • Boston or butter lettuce
  • carrot
  • cilantro

Instructions

  1. In a blender or food processor, combine all the sauce ingredients and process until smooth.
  2. Transfer to a bowl and set aside.
  3. Steam the tempeh in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot for about 15 minutes.
  4. Transfer the tempeh to a cutting board and chop into small, bite-sized pieces.
  5. In a skillet, heat 2 tablespoons (30ml) of water over medium heat.
  6. Add the tempeh, mushrooms, ginger, bell pepper, and scallions.
  7. Sauté for about 2 minutes.
  8. Add the Umami Sauce 2.0, stirring to coat.
  9. Cook for 1 minute longer, then remove from the heat and set aside.
  10. Peel and pit the avocado.
  11. Cut the avocado into a small dice and place in a small bowl.
  12. Add the lemon juice and toss to coat the avocado.
  13. Arrange the lettuce leaves on a large platter in a single layer, or place them on four individual plates, two leaves per serving. (The leaves should be face up to resemble cups for the filling.) Evenly top each lettuce leaf with the tempeh mixture, then add the diced avocado, carrot, and cilantro.
  14. Drizzle each lettuce cup with the Mango Sauce and serve any remaining sauce on the side.
  15. To eat, pick up a filled lettuce leaf and hold it as you would a taco.
