Barley Risotto with Artichokes and Mushrooms
Creamy barley risotto. Makes 4 servings.

Ingredients
- frozen artichoke hearts
- mushrooms
- garlic
- barley
- white miso paste
- Savory Spice Blend 2.0
- thyme
- onion powder
- pippali
- Vegetable Broth 2.0
Instructions
- In a large saucepan, heat ¼ cup (60ml) of water over medium heat.
- Add the artichokes, mushrooms, and garlic. Cover and cook for 5 minutes.
- Stir in the barley, miso mixture, Savory Spice Blend 2.0, thyme, onion powder, pippali, ½ cup (120ml) of the Vegetable Broth 2.0, and sodium-free salt substitute (if using), and simmer, stirring gently, until the liquid is absorbed.
- Add the remaining broth, 1 cup (235ml) at a time, stirring until the liquid is absorbed before each addition.
- Simmer, stirring frequently, until your desired consistency is reached, adding a bit more liquid, if needed, until the barley is tender.
- Serve hot.
