Ingredients

  • tempeh
  • chili powder
  • smoked paprika
  • red onion
  • red bell pepper
  • yellow bell pepper
  • zucchini
  • garlic
  • black cumin
  • cumin
  • coriander
  • cayenne pepper
  • whole-grain tortillas
  • Ranch Dressing
  • greens
  • jalapeno
  • lime

Instructions

  1. Steam tempeh 15 min; cut into thin strips.
  2. Cook strips in 2 tbsp water with 1 tsp chili powder and ½ tsp paprika, ~2 min per side; set aside.
  3. Sauté red onion, bell peppers, zucchini, and garlic in ¼ cup water ~3 min.
  4. Return tempeh; add remaining chili powder, paprika, black cumin, cumin, coriander, and cayenne. Cook until veggies are tender.
  5. Spoon onto tortillas, roll, and serve with Ranch Dressing, greens, jalapeño, and lime.
