Ingredients
- tempeh
- chili powder
- smoked paprika
- red onion
- red bell pepper
- yellow bell pepper
- zucchini
- garlic
- black cumin
- cumin
- coriander
- cayenne pepper
- whole-grain tortillas
- Ranch Dressing
- greens
- jalapeno
- lime
Instructions
- Steam tempeh 15 min; cut into thin strips.
- Cook strips in 2 tbsp water with 1 tsp chili powder and ½ tsp paprika, ~2 min per side; set aside.
- Sauté red onion, bell peppers, zucchini, and garlic in ¼ cup water ~3 min.
- Return tempeh; add remaining chili powder, paprika, black cumin, cumin, coriander, and cayenne. Cook until veggies are tender.
- Spoon onto tortillas, roll, and serve with Ranch Dressing, greens, jalapeño, and lime.
