Spicy Tempeh Fajitas with Ranch Dressing

Ingredients

  • tempeh
  • chili powder
  • smoked paprika
  • red onion
  • red bell pepper
  • yellow bell pepper
  • zucchini
  • garlic
  • black cumin
  • cumin
  • coriander
  • cayenne pepper
  • whole-grain tortillas
  • Ranch Dressing
  • greens
  • jalapeno
  • lime

Instructions

  1. Steam the tempeh in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot for about 15 minutes.
  2. Cut the tempeh into thin strips.
  3. In a skillet, heat 2 tablespoons (30ml) of water over medium heat and add the tempeh strips.
  4. Sprinkle the tempeh with 1 teaspoon of the chili powder and ½ teaspoon of the paprika.
  5. Cook for about 2 minutes per side, turning as needed.
  6. Transfer the tempeh to a plate and return the pan to the stove.
  7. Add about ¼ cup (60ml) of water to the same skillet and heat until hot.
  8. Add the red onion, bell peppers, zucchini, and garlic. Sauté for about 3 minutes, or until the vegetables soften.
  9. Add an extra tablespoon or two (15 to 30 ml) of water, if needed, so the vegetables don’t stick to the pan.
  10. Add the tempeh strips, then stir in the remaining teaspoon of chili powder, remaining ½ teaspoon of paprika, and the black cumin, cumin, coriander, and cayenne.
  11. Continue to cook until the veggies are tender.
  12. To serve, spoon the fajita filling in a line onto the bottom third of the tortillas.
  13. Roll up the tortillas, tucking in the sides.
  14. Top with the Ranch Dressing, chopped greens, and sliced jalapeño with the lime wedges on the side, and serve.
