Better Pecan Squares
Whole-food squares made with mashed banana, oats, pecans, and goji berries; suitable for dessert, snack, or breakfast.

Ingredients
- ripe bananas
- almond butter
- date sugar or date syrup 2.0
- rolled oats
- baking powder
- pecans
- goji berries
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8-inch (20-cm) square baking pan with parchment paper and set aside.
- In a food processor, combine the banana chunks, almond butter, date sugar, and 2 tablespoons (30ml) of water, then process until well blended.
- Add the oats, baking powder, pecans, and goji berries, and pulse to incorporate, adding a little more water if the mixture is too dry.
- The dough should be fairly stiff.
- Transfer the mixture to the prepared baking pan and press it evenly into the pan, smoothing the top.
- If desired, press the pecan halves into the top of the mixture, in three rows of three.
- Bake for 15 minutes, then remove from the oven and set aside to cool for at least 15 minutes.
- When ready to serve, cut into squares and enjoy.
