Better Pecan Squares

Whole-food squares made with mashed banana, oats, pecans, and goji berries; suitable for dessert, snack, or breakfast.

Ingredients

  • ripe bananas
  • almond butter
  • date sugar or date syrup 2.0
  • rolled oats
  • baking powder
  • pecans
  • goji berries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8-inch (20-cm) square baking pan with parchment paper and set aside.
  3. In a food processor, combine the banana chunks, almond butter, date sugar, and 2 tablespoons (30ml) of water, then process until well blended.
  4. Add the oats, baking powder, pecans, and goji berries, and pulse to incorporate, adding a little more water if the mixture is too dry.
  5. The dough should be fairly stiff.
  6. Transfer the mixture to the prepared baking pan and press it evenly into the pan, smoothing the top.
  7. If desired, press the pecan halves into the top of the mixture, in three rows of three.
  8. Bake for 15 minutes, then remove from the oven and set aside to cool for at least 15 minutes.
  9. When ready to serve, cut into squares and enjoy.
