Cabbage Slaw with Savory Seed Mix
A vibrant cabbage slaw with a savory seed mix of goji berries, pumpkin seeds, sunflower seeds, and sesame seeds. A great make-ahead summer side dish.

Ingredients
- 0.5 cup goji berries
- 0.5 cup raw pumpkin seeds
- 0.25 cup raw sunflower seeds
- 3 tbsp black sesame seeds
- 3 tbsp white sesame seeds
- 0.25 cup extra-virgin olive oil
- 0.25 cup lime juice
- 2 tbsp lemon juice
- 1 tsp honey
- 1 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 3 cups shredded white or purple cabbage
- 1 zucchini, julienned
- 1 large carrot, julienned
- 6 radishes, thinly sliced
Instructions
- For the seed mix: Combine all the ingredients in a container fitted with a lid.
- For the dressing: In a small bowl or large measuring cup, whisk all the ingredients together until smooth and well combined.
- To assemble the salad: Mix all the salad ingredients together in a large bowl. Add enough dressing to coat. Season to taste, then sprinkle with ½ cup of the seed mix. Serve immediately.
