Ingredients
- 0.5 cup goji berries
- 0.5 cup raw pumpkin seeds
- 0.25 cup raw sunflower seeds
- 3 tbsp black sesame seeds
- 3 tbsp white sesame seeds
- 0.25 cup extra-virgin olive oil
- 0.25 cup lime juice
- 2 tbsp lemon juice
- 1 tsp honey
- 1 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 3 cups shredded white or purple cabbage
- 1 zucchini, julienned
- 1 large carrot, julienned
- 6 radishes, thinly sliced
Instructions
- Seed mix: Combine all ingredients in a lidded container.
- Dressing: Whisk all dressing ingredients until smooth and well combined.
- Salad: Toss all salad ingredients in a large bowl. Add enough dressing to coat, season to taste, sprinkle with ½ cup seed mix, and serve immediately.
