Ingredients

  • 0.5 cup goji berries
  • 0.5 cup raw pumpkin seeds
  • 0.25 cup raw sunflower seeds
  • 3 tbsp black sesame seeds
  • 3 tbsp white sesame seeds
  • 0.25 cup extra-virgin olive oil
  • 0.25 cup lime juice
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 3 cups shredded white or purple cabbage
  • 1 zucchini, julienned
  • 1 large carrot, julienned
  • 6 radishes, thinly sliced

Instructions

  1. For the seed mix: Combine all the ingredients in a container fitted with a lid.
  2. For the dressing: In a small bowl or large measuring cup, whisk all the ingredients together until smooth and well combined.
  3. To assemble the salad: Mix all the salad ingredients together in a large bowl. Add enough dressing to coat. Season to taste, then sprinkle with ½ cup of the seed mix. Serve immediately.
