Pistachio Mint Pesto

A flavorful pesto with toasted pistachios, mint, and basil. Pistachios are rich in vitamin B6, potassium, and lutein for eye health. Great alongside grilled meat or lamb.

Ingredients

  • 1 cup toasted pistachios
  • 2 garlic cloves
  • 2 cups packed fresh mint leaves
  • 0.5 cup fresh basil leaves
  • 0.25 cup lemon juice
  • 0.67 cup extra-virgin olive oil
  • 1 tsp kosher salt

Instructions

  1. In a food processor, pulse the pistachios and garlic until the nuts are a coarse texture. Add the mint and basil and continue pulsing until the mixture is roughly chopped. Add the lemon juice, half the olive oil, and salt. Pulse a few more times until the mixture comes together. Be careful not to overmix.
  2. Transfer the pesto to a small bowl and stir in the remaining olive oil. Adjust the seasoning, if necessary.
  3. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
