Ingredients

  • 1 cup toasted pistachios
  • 2 garlic cloves
  • 2 cups packed fresh mint leaves
  • 0.5 cup fresh basil leaves
  • 0.25 cup lemon juice
  • 0.67 cup extra-virgin olive oil
  • 1 tsp kosher salt

Instructions

  1. Pulse pistachios and garlic in a food processor to a coarse texture. Add mint and basil; pulse until roughly chopped. Add lemon juice, half the olive oil, and salt; pulse until mixture comes together. Avoid overmixing.
  2. Transfer to a bowl and stir in remaining olive oil. Adjust seasoning if needed.
  3. Store airtight in the fridge up to 1 week or freeze up to 2 months.
