Ingredients
- 1 cup toasted pistachios
- 2 garlic cloves
- 2 cups packed fresh mint leaves
- 0.5 cup fresh basil leaves
- 0.25 cup lemon juice
- 0.67 cup extra-virgin olive oil
- 1 tsp kosher salt
Instructions
- Pulse pistachios and garlic in a food processor to a coarse texture. Add mint and basil; pulse until roughly chopped. Add lemon juice, half the olive oil, and salt; pulse until mixture comes together. Avoid overmixing.
- Transfer to a bowl and stir in remaining olive oil. Adjust seasoning if needed.
- Store airtight in the fridge up to 1 week or freeze up to 2 months.
