Ranch Dressing
Tangy creamy dressing. Makes about 1 cup.

Ingredients
- raw cashews
- unsweetened soy milk
- lemon juice
- apple cider vinegar
- garlic
- scallion
- white miso paste
- onion powder
- pippali
Instructions
- In a small saucepan, combine the cashews and enough water to cover.
- Bring to a boil, then lower the heat to medium and simmer for 15 minutes.
- Drain the cashews, then transfer them to a high-powered blender.
- Add the soy milk, lemon juice, vinegar, garlic, scallion, miso paste, onion powder, and pippali.
- Blend until smooth.
- Taste to adjust the seasoning, if needed.
- Transfer to a bowl, cover, and refrigerate for at least 20 minutes before using to allow the flavors to develop.
