Tangy creamy dressing. Makes about 1 cup.

Ingredients

  • raw cashews
  • unsweetened soy milk
  • lemon juice
  • apple cider vinegar
  • garlic
  • scallion
  • white miso paste
  • onion powder
  • pippali

Instructions

  1. In a small saucepan, combine the cashews and enough water to cover.
  2. Bring to a boil, then lower the heat to medium and simmer for 15 minutes.
  3. Drain the cashews, then transfer them to a high-powered blender.
  4. Add the soy milk, lemon juice, vinegar, garlic, scallion, miso paste, onion powder, and pippali.
  5. Blend until smooth.
  6. Taste to adjust the seasoning, if needed.
  7. Transfer to a bowl, cover, and refrigerate for at least 20 minutes before using to allow the flavors to develop.
