Cocoa-Almond Butter Cookies
Banana-sweetened cocoa cookies made with oat and almond flour, topped with optional walnut halves.

Ingredients
- ripe banana
- oat flour
- almond flour
- date syrup 2.0
- almond butter
- unsweetened cocoa powder
- vanilla extract
- walnut halves
Instructions
- Preheat the oven to 350°F (175°C).
- Line a rimmed baking sheet with parchment paper and set aside.
- In a large bowl, combine the mashed banana, oat flour, almond flour, Date Syrup 2.0, almond butter, cocoa powder, and vanilla.
- Stir well until thoroughly mixed.
- Scoop out 1 tablespoon of the dough and roll it between your hands to shape it into a ball.
- Place the dough ball on the prepared baking sheet.
- Repeat until all the cookie dough has been used, with the twelve to sixteen balls spaced about 2 inches (5cm) apart on the baking sheet.
- Wet your fingers and gently press each ball to flatten the dough into a disk about ¼ inch (0.5cm) thick.
- Press a walnut half into the center of each disk (if using).
- Bake for 12 to 15 minutes, or until lightly browned and set.
- Remove from the oven.
- Let the cookies cool completely before carefully removing them from the baking sheet with a metal spatula.
- If not serving right away, store in an air-tight container at room temperature for up to 3 days, in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
