Smoky Roasted Pepper and Walnut Dip

Ingredients

  • 1 cup roasted red peppers from jar, drained
  • 0.5 cup toasted walnut pieces
  • 2 tbsp almond flour
  • 0.5 tsp toasted cumin seeds
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp pomegranate molasses
  • 1 tbsp tomato puree
  • 1 tsp Aleppo pepper flakes
  • 1 tsp smoked paprika
  • 1 tsp kosher salt

Instructions

  1. In a food processor, combine the red peppers, walnuts, almond flour, and cumin. Pulse a few times until the mixture is slightly blended. Add the olive oil, lemon juice, pomegranate molasses, tomato puree, Aleppo pepper, and paprika. Blend until smooth, then season with the salt.
  2. Transfer the dip to a bowl. Using the back of a spoon, smooth the top, then create swirls. Top with a drizzle of olive oil and the remaining chopped walnut pieces.
  3. Store in an airtight container in the refrigerator for up to 1 week.
