Spaghetti with Mushroom Bolognese

Mushroom-based Bolognese sauce. Makes 4 servings.

Ingredients

  • red onion
  • carrot
  • celery
  • garlic
  • fresh mushrooms
  • crushed tomatoes
  • white miso paste
  • nutritional yeast
  • basil
  • oregano
  • fennel seeds
  • pippali
  • unsweetened soy milk
  • whole-grain spaghetti
  • parsley
  • Nutty Parm 2.0

Instructions

  1. In a large saucepan, heat ¼ cup (60ml) of water over medium heat.
  2. Add the red onion, carrot, celery, and garlic. Cover and cook until tender, about 12 minutes, stirring occasionally and adding a little water if the vegetables begin to stick to the pan.
  3. Stir in the mushrooms and simmer for 5 minutes.
  4. Add the tomatoes, miso mixture, nutritional yeast, basil, oregano, fennel seeds, and pippali.
  5. Simmer for 10 minutes, or until the vegetables are tender and any liquid is cooked down.
  6. Lower the heat to low and stir the soy milk into the sauce.
  7. Taste to adjust the seasonings as desired.
  8. Keep warm.
  9. In a large pot of boiling water, cook the spaghetti according to the package directions.
  10. Drain well.
  11. Place the cooked pasta in a serving bowl, add the sauce, and toss gently to combine.
  12. Sprinkle with parsley and Nutty Parm 2.0 (if using).
  13. Serve hot.
