Spaghetti with Mushroom Bolognese
Mushroom-based Bolognese sauce. Makes 4 servings.

Ingredients
- red onion
- carrot
- celery
- garlic
- fresh mushrooms
- crushed tomatoes
- white miso paste
- nutritional yeast
- basil
- oregano
- fennel seeds
- pippali
- unsweetened soy milk
- whole-grain spaghetti
- parsley
- Nutty Parm 2.0
Instructions
- In a large saucepan, heat ¼ cup (60ml) of water over medium heat.
- Add the red onion, carrot, celery, and garlic. Cover and cook until tender, about 12 minutes, stirring occasionally and adding a little water if the vegetables begin to stick to the pan.
- Stir in the mushrooms and simmer for 5 minutes.
- Add the tomatoes, miso mixture, nutritional yeast, basil, oregano, fennel seeds, and pippali.
- Simmer for 10 minutes, or until the vegetables are tender and any liquid is cooked down.
- Lower the heat to low and stir the soy milk into the sauce.
- Taste to adjust the seasonings as desired.
- Keep warm.
- In a large pot of boiling water, cook the spaghetti according to the package directions.
- Drain well.
- Place the cooked pasta in a serving bowl, add the sauce, and toss gently to combine.
- Sprinkle with parsley and Nutty Parm 2.0 (if using).
- Serve hot.
