Pumpkin Seed Cardamom Butter

Ingredients

  • 2 cups raw pumpkin seeds
  • 2 Medjool dates
  • Boiling water
  • 1 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat the oven to 350°F.
  2. Place the pumpkin seeds on a baking sheet and bake for 8 to 10 minutes, until golden, shaking the pan a few times to ensure even cooking.
  3. Place the dates in a heatproof bowl, cover with just boiled water, and soak for 5 minutes, then drain.
  4. Transfer the warm seeds to a food processor and blend, scraping down the sides as needed, until smooth, about 8 minutes. Add the dates, cardamom, cinnamon, ginger, and coconut oil. Continue blending for 2 to 3 minutes, until smooth.
  5. Transfer to an airtight container and store in the pantry for up to 1 month.
