Pumpkin Seed Cardamom Butter
A pumpkin seed butter spiced with cardamom, cinnamon, and ginger. Pumpkin seeds are rich in antioxidants, iron, and magnesium for heart health and blood sugar regulation.

Ingredients
- 2 cups raw pumpkin seeds
- 2 Medjool dates
- Boiling water
- 1 tsp ground cardamom
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 2 tbsp melted coconut oil
Instructions
- Preheat the oven to 350°F.
- Place the pumpkin seeds on a baking sheet and bake for 8 to 10 minutes, until golden, shaking the pan a few times to ensure even cooking.
- Place the dates in a heatproof bowl, cover with just boiled water, and soak for 5 minutes, then drain.
- Transfer the warm seeds to a food processor and blend, scraping down the sides as needed, until smooth, about 8 minutes. Add the dates, cardamom, cinnamon, ginger, and coconut oil. Continue blending for 2 to 3 minutes, until smooth.
- Transfer to an airtight container and store in the pantry for up to 1 month.
