Quick Spicy Tomato Soup

Classic tomato soup with cannellini beans and a hint of spice. Cooked tomatoes contain lycopene, a carotenoid antioxidant that controls cholesterol and protects against free radicals.

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 yellow onion, coarsely chopped
  • 1 large carrot, coarsely chopped
  • 1 celery stalk, coarsely chopped
  • 1.5 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 2 garlic cloves, smashed
  • 0.5 tsp red pepper flakes
  • 1 tbsp tomato paste
  • 1 (28-oz) can San Marzano whole tomatoes
  • 1 (15.5-oz) can cannellini beans, drained and rinsed
  • 2 cups vegetable stock or water
  • 0.25 cup toasted pumpkin seeds

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and celery and season with the salt and pepper. Cook, stirring often, until the onion is translucent, 6 to 8 minutes.
  2. Add the garlic and red pepper flakes and stir until fragrant, about a minute. Stir in the tomato paste. Add the tomatoes with their juices and cook for 5 minutes. Use a wooden spoon to break them down. Add the beans and stock, bring to a boil, then reduce the heat and simmer for 20 minutes.
  3. Remove from the heat and puree with an immersion blender in the pot, or in small batches in a blender, until smooth. Top with pumpkin seeds and serve.
