Quick Spicy Tomato Soup
Classic tomato soup with cannellini beans and a hint of spice. Cooked tomatoes contain lycopene, a carotenoid antioxidant that controls cholesterol and protects against free radicals.

Ingredients
- 2 tbsp extra-virgin olive oil
- 1 yellow onion, coarsely chopped
- 1 large carrot, coarsely chopped
- 1 celery stalk, coarsely chopped
- 1.5 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 2 garlic cloves, smashed
- 0.5 tsp red pepper flakes
- 1 tbsp tomato paste
- 1 (28-oz) can San Marzano whole tomatoes
- 1 (15.5-oz) can cannellini beans, drained and rinsed
- 2 cups vegetable stock or water
- 0.25 cup toasted pumpkin seeds
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and celery and season with the salt and pepper. Cook, stirring often, until the onion is translucent, 6 to 8 minutes.
- Add the garlic and red pepper flakes and stir until fragrant, about a minute. Stir in the tomato paste. Add the tomatoes with their juices and cook for 5 minutes. Use a wooden spoon to break them down. Add the beans and stock, bring to a boil, then reduce the heat and simmer for 20 minutes.
- Remove from the heat and puree with an immersion blender in the pot, or in small batches in a blender, until smooth. Top with pumpkin seeds and serve.
