Tempeh Satay with Spicy Peanut Sauce
Indonesian-inspired tempeh satay. Makes 4 servings.

Ingredients
- garlic
- peanut butter
- rice vinegar
- white miso paste
- cayenne
- tempeh
- Date Syrup 2.0
- ginger
- lime juice
- coriander
- black cumin
- turmeric
- lettuce
- cilantro
Instructions
- In a small blender or food processor, combine the garlic, peanut butter, vinegar, and miso paste, then blend to a paste.
- Add the cayenne and ⅓ cup (80ml) of water, and blend until smooth.
- If the sauce is too thick, blend in a little more water.
- Transfer to a small bowl and set aside.
- If not using the sauce right away, cover and refrigerate until needed.
- Cut the tempeh into 1-inch (2.5-cm) cubes.
- Steam the tempeh in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot for 10 minutes, then drain, transfer to a shallow bowl, and set aside.
- In a small bowl, combine the Date Syrup 2.0, miso paste, ginger, lime juice, vinegar, garlic, coriander, black cumin, and turmeric, then set aside.
- Thread the tempeh onto skewers and arrange them in a single layer in a baking pan.
- Pour the marinade over the tempeh, turning to coat.
- Marinate for at least 30 minutes at room temperature or up to two hours in the refrigerator.
- Preheat the grill or broiler.
- Remove the tempeh skewers from the pan and reserve the marinade.
- Place the skewers on a hot grill or under the broiler until browned, about 5 minutes per side.
- Spread shredded lettuce (or cooked grains and greens) on a platter.
- Arrange the tempeh skewers on top.
- Drizzle with the marinade and garnish with the lime wedges and cilantro.
- Serve with the Spicy Peanut Sauce.
