Tempeh Satay with Spicy Peanut Sauce

Indonesian-inspired tempeh satay. Makes 4 servings.

Ingredients

  • garlic
  • peanut butter
  • rice vinegar
  • white miso paste
  • cayenne
  • tempeh
  • Date Syrup 2.0
  • ginger
  • lime juice
  • coriander
  • black cumin
  • turmeric
  • lettuce
  • cilantro

Instructions

  1. In a small blender or food processor, combine the garlic, peanut butter, vinegar, and miso paste, then blend to a paste.
  2. Add the cayenne and ⅓ cup (80ml) of water, and blend until smooth.
  3. If the sauce is too thick, blend in a little more water.
  4. Transfer to a small bowl and set aside.
  5. If not using the sauce right away, cover and refrigerate until needed.
  6. Cut the tempeh into 1-inch (2.5-cm) cubes.
  7. Steam the tempeh in a metal steamer basket over an inch (2.5cm) or so of boiling water in a covered saucepan or pot for 10 minutes, then drain, transfer to a shallow bowl, and set aside.
  8. In a small bowl, combine the Date Syrup 2.0, miso paste, ginger, lime juice, vinegar, garlic, coriander, black cumin, and turmeric, then set aside.
  9. Thread the tempeh onto skewers and arrange them in a single layer in a baking pan.
  10. Pour the marinade over the tempeh, turning to coat.
  11. Marinate for at least 30 minutes at room temperature or up to two hours in the refrigerator.
  12. Preheat the grill or broiler.
  13. Remove the tempeh skewers from the pan and reserve the marinade.
  14. Place the skewers on a hot grill or under the broiler until browned, about 5 minutes per side.
  15. Spread shredded lettuce (or cooked grains and greens) on a platter.
  16. Arrange the tempeh skewers on top.
  17. Drizzle with the marinade and garnish with the lime wedges and cilantro.
  18. Serve with the Spicy Peanut Sauce.
