Ingredients
- 1 shallot, thinly sliced
- 2 tbsp sherry vinegar
- 2 tbsp extra-virgin olive oil
- 0.5 tsp kosher salt
- 1.5 lb mixed heirloom and cherry tomatoes
- 1 (14-oz) can artichoke hearts, drained and quartered
- 2 tbsp capers, drained
- 0.25 cup chopped fresh dill
- 6 oz smoked mackerel fillet
- 2 tbsp toasted pine nuts
- Freshly ground black pepper
Instructions
- Combine shallot and sherry vinegar in a small bowl; let sit 10 min. Whisk in olive oil and season with salt.
- Toss tomatoes, artichokes, capers, and dill in a large bowl. Remove shallots from vinaigrette, add to salad, and toss to coat. Arrange mackerel fillets on top. Drizzle with remaining vinaigrette and garnish with toasted pine nuts, cracked pepper, and extra dill.
