Ingredients

  • 0.5 cup whole raw almonds
  • 2 tbsp sesame seeds
  • 1 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp fennel seeds
  • 1 tsp black peppercorns
  • 0.5 tsp flaky salt

Instructions

  1. Heat oven to 350°F. Roast almonds on a baking sheet 8–10 min until toasted and golden. Cool slightly.
  2. Toast sesame seeds, coriander seeds, cumin seeds, fennel seeds, and peppercorns in a dry pan over medium, stirring often, 1–2 min until fragrant and golden. Cool slightly.
  3. Pulse roasted almonds and toasted spices in a food processor with salt until mixture resembles a fine crumb.
  4. Cool completely before storing airtight in the pantry up to 1 month.
