From The Young Forever Cookbook
Ingredients
- 6 oz dark (70% cacao) chocolate
- 1 tbsp coconut oil
- 1 cup fresh blueberries
- 0.5 cup toasted coconut chips
Instructions
- Place the chocolate and coconut oil in a heatproof bowl. Make a double boiler by filling a pot with 3 inches of water. Place over medium heat and bring to a simmer. Set the bowl of chocolate on top of the pot, but not touching the water, and gently melt the chocolate, stirring often. Once melted completely, carefully remove the bowl from the heat and allow it to cool slightly.
- Using a spoon, drop quarter-sized portions of chocolate onto the baking sheet. Top each with three blueberries and some coconut chips. Drizzle a bit of chocolate over the blueberries. Chill the baking sheet in the fridge for at least 20 minutes.
- Store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
